So Ever since I started doing the unstable releases, I can’t ever seen to actually acquire a knife so I can promote a trapper. Am I missing something? Or am I stuck until a traveler gives me one?
Well, first of all, welcome aboard, @jcscribbles! 
Anyway, the Unstable release of Stonehearth Alpha 4 has the Trapper Class removed due to feedback from the community, and the team is working to improve it. You should expect it to come in the next release of the Alpha.

Like @EpicDwarf said, the trapper is currently disabled.
