Perhaps, when your town gets bigger and such, hearthlings could have more meals, as well as not working as much, when your workforce gets bigger? This could make the hearthlings really feel like people later on and also bring the world of stonehearth feel more lively, as they would do various recreation activities when they take breaks. This is also where alcohol comes in. The point at which these things can start happening should also be the point at which you can have a brewer. His alcoholic drinks could raise morale, but it could also make hearthlings drunk, in which they would be disobedient crazy people. But, you could also limit the times at which hearthlings could drink these beverages, allowing you to be able to control this kinda thing. (But that doesn’t mean they’d always obey those time limits!) Tell me what you guys think and I’ll see ya later!
They are already disobedient crazy people, no need of alcohol for that.
Introduce Kegs with spigots that we can place (home/ building we construct, or just outside) this will change it from just the campfire as a meeting/social place. Eventually I think as we ever increase the population (whatever that number will be), we should be able to “Retire” certain workers.
The daily task for these citizens will basically be Eat/ walk to a socializing places/ sleep. I think something like your suggesting would really make the settlement feel alive.
I feel it’s worth mentioning again that for some reason, I visualize my Hearthlings as college kids who signed up for the wrong Study Abroad program. No clue why.
There have been hints at brewing before. Also, @Tom’s mentioned that fishing could possibly be a thing your workers can do in their free time if they have the proper stuff.

to my knowledge @Tom said we wont have a fishermen, but rather the workers will go fish in their free time.
Without a fisherman, we won’t have time to catch an amount of fish to where it’s a reliable source of food! Plus, no fishing towns+legendary fish!
I like the idea of hearthlings taking some leisure time after work, go to the pub and have a drink or two.
May be, after the sun goes down, they could gather around the campfire until a tavern is built for the purpose and get a drink from a nearby barrel and some food. Then after a while go to bed and get ready for the next day.
They could also have some sort of festival days. We put together a lot of food and drinks, Then one day we declarate it “festival day” and the hearthlings take that day off. They don’t do anything but eating, drinking, playing and have fun. After that they get a little hangover and a buff to do things for a few days.
Then they start waiting for the next festival.
The lore that is being created could be used to set days for this festivals, and if the player does not prepare nor celebrate them the hearthlings may get upset and work less…

Festivals are already planned, and I think you did a good job summing them up. And, just saying, another punishment for forgotten festivals is the wrath of otherworldly powers!
