One thing I’ve noticed, unless it’s already known, is that Hearthlings have trouble building roofs that are odd-dimensioned. For clay roofs, if one of the wood bannisters ends up right against the wall, they don’t build that. For wooden roofs, if it comes up to one block wide edge at the top. I’m not sure on what other criteria they stop building roofs, though.
